Roasted Root Vegetables
My sister makes the very best roasted veggies. After an hour or more they are oh so sweet. Her secret? Never skimp on good olive oil. I think it’s freshness. She dug the carrots out of the snow-covered ground an hour before they went into the oven. Heaven!
