A Taste of Kailua I:  Lilikoi Jam

6 Lilikoi (a.k.a. passion fruit)
2 cups water
2 cups sugar
Juice of a small lime

  1. Cut the lilikoi in half and scoop the pulp and seeds into a bowl. Cover and refrigerate until needed.
  2. Place shells in a bowl and cover with water. Soak shells over night or longer.
  3. When ready to prepare the jam, boil the shells and water for 20 - 25 minutes or until most of the water evaporates. Remove from heat and reserve the liquid, about a 1/2 cup.
  4. When shells are cool enough to handle remove the outer skins. They should peel easily.
  5. Puree the inner part of the shells with the reserved liquid.
  6. Combine the puree, pulp, sugar and lime juice in a medium heavy-bottomed sauce pan. Don’t get fussy about the seeds; they add a pleasant crunch.
  7. Boil briskly for about 20-25 minutes, until set.

Makes 2 - 2 1/2 cups.
